Tony Cimmino – Chef De Cuisine

First tour of the MCG kitchen started in 2005 when I joined as Head Chef of Culinary Development. The second came in 2015 when I returned to oversee the Committee Room. I brought my own unique style of food to the match day and non-match day offering. When the Committee Room rebranded as the Committee Room by Grossi earlier this year – it gave me the chance to revisit my roots, where I began my career in a busy family owned Italian Restaurant on Chapel Street.  

The Committee Room by Grossi will bring an iconic Melbourne restaurant experience into the MCG. Contemporary Italian food featuring the finest local Victorian and Australian produce. I love that there are elements if theatre – such as the tiramisu served at the table – it’s both decadent and theatrical and of course delicious!

A major change is that the restaurant is now open to the public where it was previously members only. The service style is more formal than before, but the biggest change really is that it is unapologetically Italian. The food is simple, elegant and has broad appeal. A great example of this was the Truffle Dinner on the 22nd July – where we celebrated this rare seasonal product with a menu that showcases it best.
